I'm back for two items!
-Scores-A restaurant chain well known in Quebec tested today on Silence is food.
A rotisserie serving chicken, ribs, delicious entrees and a great soup and salad bar? Here you are at Scores! The service is good, very friendly and fast on the flats!
During my last visit I tasted the tender chicken with Dijon sauce and sweet potato fries with, as input, the soup and salad bar. Without forgetting the dessert, simple strawberry ice cream.
Most dishes are excellent. The only problem is ... the waitresses are too fast! Yep, we just got our soup and some salad and we had our dishes had arrived at our table! It was probably because the restaurant, which had just opened, had not accumulated enough experience.
There are several throughout Quebec and the price is still reasonable I would therefore recommend this restaurant.
-Billaigrettes-
The billaigrettes are balls with dressing, as a gelling agent, agar agar, available in health food stores natural foods.
Here's the recipe:
50 ml balsamic vinegar
25 ml raspberry vinegar
0.5 g of salt
5 g sugar
1 g Agar agar
50 ml of water
1 liter canola oil very cold (at least three hours in the freezer)
Collapse third the vinegar mixture.
Mix salt, sugar and agar agar. Add to vinegar with water. Heat to simmer. Draw the liquid into a pipette or syringe and let the drops fall in the oil.
Although simple in appearance, it is necessary to be careful by this preparation. A high pot, capable of leaving the ball in space, is important. Too low, the ball did not have time to stay cool and watery.
Once the ball completed, simply filter the oil (you can reuse) and spread them on plates billaigrettes salad your guests. A simple vinaigrette, and original. Just in time for Christmas (thank you to the show's Grocery)!
